Southern Pecan Catfish, Red Potato Wedges, and Vanilla Pound Cake with fresh fruit

How about an old-fashioned Southern food Catfish? For something really tasty, these Catfish Pecan South. Know if the south has to have butter and cream. This is the fried catfish in butter and served with a creamy sauce. Invite your friends lovin catfish share this meal with you. You really impress them! Network Potato Wedges make a great dish. And finish your meal with another Southern staple, Vanilla Pound Cake with fresh fruit.

SOUTHERN CATFISH PECAN

1 cup chopped walnuts, divided

Cornmeal 1 / 2 cup

1 teaspoon salt divided

1 teaspoon pepper, divided

4 catfish fillets (about 6 ounces each)

1 / 2 cup butter, divided

1 / whipping cream 2 cup heavy

2 tablespoons lemon juice

1 tablespoon chopped fresh parsley

In a slight bow, combine the following ingredients: 1 / 2 cup nuts, cornmeal, 1 / 2 teaspoon salt and 1 / 2 teaspoon pepper. Coat the fillets with this mixture.

In a large skillet, melt 1 / 4 cup butter over medium-high heat. Fry the fish in the pan until it flakes with a fork. This should take about 6 to 7 minutes per side cooking. Remove from pan but keep warm.

Melt the remaining butter over medium heat in skillet used to cook fish. Add remaining nuts and cook and stir for a minute. Add cream, lemon juice and remaining salt and pepper. Cook the mixture, stirring constantly, for a minute over another. Add the parsley and spoon sauce over fish before serving.

RED POTATO WEDGES

4 medium red potatoes, washed and chopped

1 tablespoon olive oil extra virgin

1 1 / 2 teaspoon chopped fresh rosemary (or 1 / 2 teaspoon dried crushed rosemary)

1 / teaspoon garlic powder 4

Low 1 / 4 teaspoon fresh black pepper

Preheat oven at 425 degrees. Wedges Place potatoes in large bowl. Sprinkle with remaining ingredients and stir to coat. Place on a baking sheet that has been sprayed with cooking oil spray. Cover and bake 20 minutes. Turn potatoes and continue cooking another 20 minutes or until browned.

NOTE: As a diabetic should not eat potatoes themselves. These are good with burgers, steaks, chicken, fish, etc., which are high in protein.

Vanilla Pound Cake

2 1 / 2 cups fat baking mix (Bisquick)

1 1 / 2 cups Equal Sugar Lite

2 tablespoons cornstarch

1 cup vanilla-flavored nonfat yogurt light

6 tablespoons stick butter or margarine, melted

1 / 4 cup milk 2%

2 eggs

1 teaspoon vanilla extract

1 / teaspoon almond extract 2

Combine baking mix, Equal Sugar Lite and cornstarch in a bowl. Mix the yogurt, melted butter, milk, eggs and seasonings until well blended.

Spoon mixture into the well greased Bundt pan. Bake in preheated oven at 350 degrees 45 to 50 minutes or until toothpick inserted in center comes out clean. Let cool in pan for 10 minutes. Carefully remove cake from pan and cool completely on a wire rack.

Serve with fresh fruit.
